Holly Malfitani

Sommelier and Winemaker

Holly’s is passionate about teaching the art of winemaking to her students. Behind the scenes, she’s often referred to as “the chemist,” as she uses her background in science, coupled with her wine education, to monitor all the essential winemaking steps – sometimes with the help of her son, Lucius. Holly is always seeking new ways to learn about wine, completing the UC Davis Winemaking Certificate program, as well as earning a CSW (Certified Specialist of Wine). Holly is also a Certified Sommelier through the Court of Master Sommeliers and a member of the Guild of Sommeliers.

What sparked you interest in winemaking?
It is an off-the-beaten path profession that challenged me scientifically, while allowing me to express my artistic side. Once I got a taste of production work, I knew there was no turning back.

Tell us about your favorite winemaking memory?
Honestly, every time I can share a glass of wine that I helped a student make, it’s not only a special moment, but it also becomes a great memory.

If you had to choose one favorite varietal, which one would it be?
Well that would be like asking me to choose one favorite child …
